羽釜HAGAMA

    米の計量は正確に行います。キッチンスケールを使って計り、2合(300g)の米をボウルに入れます。米袋の下部の端を手で持ち、もう一方の手で上部を持つと、米をきれいに入れられます。

    Measure the exact amount of rice. Put two servings of rice (300g) in a bowl. Use a scale. You can put rice neatly, putting your one hand on the bottom of a rice package, and another hand on top of the package.

    水を張ったボウルに、米を入れます。一般的には米の入ったボウルに水を加えますが、米が水に浸かる時間を均一にするためにこちらのやり方にしています。

    Drop the rice in a bowl, filled with water. While it is typical to add water to the rice, use a different way to equalize the time for soaking rice in water.

    さっと水で洗って、米の表面の汚れを落とします。

    Wash off soiling on the surface under water.

    米をざるにあけます。

    With the bowl running, add water steadily.

    水をきった米をボウルに移し、ソフトボールを持つような手の形にして20回ほど手早くかき混ぜます。米が互いにこすれ、かしゃかしゃと音が立つように研ぎます。
    ※米研ぎはざるではなく、必ずボウルを使って研いでください。ざるを使用すると米が割れやすくなり、中のでんぷんが溶け出してベトベトのごはんになってしまいます。
    ※米研ぎの工程は3分以内で、できるだけ冷水で行ってください。

    Drain. Put the rice in the bowl, and quickly stir about 20 times with your hands as if you hold a softball. Rub the rice until it makes a clicking sound.
    * Use a bowl to rub the rice. Do not use a sieve. If you use a sieve, the rice could be broken to pieces, and then starch comes out, making the rice sticky.
    * This step of rubbing the rice should be done within three minutes. Use cold water.

    乳白色ににごった水は、できるだけ米にふれさせないようにします。

    Remove the turbid water from rice.

    水を加え、すすぎます。

    Add water.

    ざるにあけます。水をきった米をふたたびボウルに移し、先ほどと同じ工程で米を研ぎます。水を加えてすすぎ、ざるにあけます。

    Rinse rice in water, and drain. Put the rice in a bowl, and rub the rice again just like you did before. Add water, and rinse rice in water and drain.

    ボウルに移した米に水を張り、うっすらと米が透けて見える状態になればOKです。ぬかのにおいが気になるときは、もう一度繰り返します。

    Pour water into the bowl of rice. It is alright if the rice is transparent. If you want to remove the smell of bran, repeat the step again.

    最後にざるで水をよくきります。

    Finally, drain the turbid water with the sieve.

    研いだ米を羽釜に入れます。

    Put the polished rice into Hagama.

    1合につき、200mℓの水を加えます。今回は2合で炊くので、400mℓの水を加え、30分以上浸水させます。できれば冷蔵庫で2時間浸水がベストです。

    Add 200 ml of water per 1 serving. As we cook for two servings, add 400 ml of water, and soak the rice in water for 30 minutes.

    コンロに羽釜をおいて火をつけます。10分程度で沸騰するように、中弱火にして炊きます。

    Put the Hagama on a cooking stove, and heat. Cook over a low and medium heat to be boiled after 8-10 minutes.

    沸騰後、15分程度を目安に火を止めますが、音を聞いて判断します。ブクブクという音から、泡の弾けるパチパチという音に変わったらOKです。一瞬だけ強火にして、すぐに火を止めます(土鍋と違って羽釜は冷めやすいので、蒸らし中の鍋の温度を上げるため)。そのまま10分蒸らします。

    After boiling, remove the heat - it takes about 15 minutes, but follow the sound and remove. Cook until it sounds bubbling. Turn the heat to high, and remove the heat soon to increase the heat - as Hagama is easy to cool down, unlike Do-nabe. Simmer for another 10 minutes.

    炊き上がりました。

    The rice is ready.

    羽釜で炊いたごはんを、おひつに移します。茶碗にごはんをよそって、いただきます。

    Transfer the cooked rice in Hagama into the rice cooker. Serve the rice, and eat.
